This time of year reminds me that some of my favorite things in life are cooking and eating healthy, I could also add in there being lazy!
Sadly, they’re often mutually exclusive because, well, takeout. Let’s be honest, takeout is simply convenient and that’s a big part of its appeal.
But then I remember it is possible to make my Crockpot do all of the cooking for me. I forget how easy it is to take the over salted, processed ingredients out and bingo—nutritious food with no effort. Now if you are feeling extra lazy one day you can still make a homemade clean slow cooked meal! How cool is that?!

Slow Cooker Coconut Lime Chicken

Coconut lime makes a perfect summer cocktail but surprisingly makes a wonderful chicken dinner. It’s sweet, tart and a little spicy. Have it with some brown rice and a leafy vegetable for a complete and clean eating meal!

Tacos are always a good meal for clean eating and when you can just set up the crockpot with everything you need it just couldn’t be easier. Make these carnitas for taco Tuesday or have it over a homemade burrito bowl for lunch. There’s a lot that you can do with a little amount of effort!

These “meaty” vegetarian stuffed peppers are perfect for a healthy meal. Eating vegetarian sometimes is a bonus since generally vegetables are cheaper so even your wallet will be happy too!

This chicken recipe is a perfect set it and forget it recipe. Set it on low and get a full day’s errands or work done while your delicious chicken is cooking. It’s easy to make the sauce ahead of time and freeze so you can really make this anytime and know that you are having a healthy meal!

This is a great warm hearty soup for a cold day but it also light enough that you don’t feel like a potato after. I even enjoy these meatballs with marinara sauce and spaghetti squash!
