Do you celebrate St. Patrick’s Day? Do you wear green, drink green beer and search for leprechauns? What about celebrating by enjoying some boozy Guinness cupcakes? Oh yeah, that’s my idea of celebrating!
Its finally March and soon to be spring! How can we NOT be excited about the official first day of spring, the warmer weather, flowers will be blooming, spring break and then Easter is here. How awesome does that sound? But first things first, St. Patrick’s Day!
Growing up, I remember going to school on St. Patrick’s Day, all of us knew that green was mandatory… or you would pay the price in pinches.
Today, I’ve rounded up a few of my favorite St. Patty’s Day dessert recipes. They are sure to count as your something green when March 17th comes around.

Do you know what a Brookie is? It’s a chocolate chip cookie and chocolate brownie baked together for this ultimate sweet treat! To make it St. Patty’s Day friendly place some chocolate brownie batter down in a prepared pan, then add mint Oreos on top, press them into the brownie batter. Next, on top add the chocolate chip cookie dough mixed with mint M & M’s then bake all together. How easy is that?!

Patrick’s Day Rice Krispie Treats with Lucky Charms Marshmallows

Lucky Charms is the best St. Patrick’s Day cereal and maybe one of the best cereals (but that’s for another time). Making rice krispies treats are very easy and something kids can make. When making the rice krispie treats, add a leaf green food color to the marshmallows and add the marshmallow charms to the mix. As it cools the mixture harden which you can then enjoy your Lucky Charm cereal in a new way!

Here’s the pot of gold at the end of the rainbow. But you can eat this rainbow! I like to add a mini Reese’s peanut butter cup inside the chocolate cake batter. After pouring the batter into each cupcake liner, add the peanut butter cup to the center. It creates an awesome chocolate cake and a sweet surprise! Top with a fluffy Swiss Meringue Buttercream that is striped with colors of the rainbow. Finish with a gold chocolate coin! Happy St. Patty’s Day!
