Avocado Rose Toast

This avocado rose toast recipe has everything from crisp and clean but is still satisfying and straightforward! With these tips and tricks now you can also be a food stylist while creating this fancy avocado rose toast easily at home!

Ingredients

  • 2 slices whole wheat country loaf
  • 1/2 cup classic hummus
  • 1/2 cup fresh arugula
  • 1/2 cup cucumber, thinly sliced
  • 1 jumbo ripe avocado, cut in half
  • 2 small heirloom tomatoes, cut in half
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 pinch flake salt
  • 1 pinch crushed red pepper flakes

Instructions

  1. Prep, and slice the cucumbers and tomatoes and set aside. 

  2. Cut the ripe avocado in half, then place it face down on the cutting board. Next, remove the avocado skin by peeling back the skin. Begin to thinly slice the avocado with a small paring knife for better control. Make sure to keep the avocado in a tight form. The thinner the slice, the better for rolling into itself. 

  3. Once the avocado has been sliced then begin to lengthen and straighten the avocado slices. You will start to stretch and massage the avocado until it is a straight line. Next, take the small side of the avocado slices and begin to move and roll the avocado into itself. Carefully slide and turn the avocado around until its all connected and looks like a rose. After the avocado is rolled into a rose shape drizzle lemon juice over the top to prevent browning. Carefully set aside by moving it with a flat spatula. Continue the process with the other half of the avocado. 

  4. After the avocado roses have been made, cut 2 slices of the whole wheat country loaf. For stability cut about a ½” thickness. Toast the bread. 

  5. When the bread is toasted begin to spread the creamy hummus on each slice about ¼ cup on each slice. Then add the 5-6 cucumber slices and a handful of arugula. Carefully place the avocado rose onto the middle on the toast. Next, put the tomatoes on the edges of the toast and on the plate. 

  6. Finally, drizzle olive oil, salt and crushed red pepper flakes over the avocado. Serve and enjoy! 

Recipe Notes

The key to the perfect avocado rose is the ripeness of the avocado. Now that might seem obvious but you don’t want the avocado to be too ripe so it becomes mushy or not ripe enough that the avocado slices won’t roll or bend. So you might have to play a little Goldie Locks and the three bears, too ripe, too firm and just right. Make sure to get some extra avocado just in case you run into problems. Here’s the thing if any of the roses fall apart or the avocado is too ripe you can always make guacamole or smashed avocado toast. There’s no wrong way to eat avocado but the rose certainly the fanciest!
